INGREDIENTS
SALAD
2 cups cooked brown rice
1 tin green beans
1 red pepper chopped
4 spring onions chopped
1 tin whole sweetcorn
1 celery stalk chopped with leaves
1 cup halved cherry tomatoes
1/2 cup raisins
1/2 cup cashew nuts
salt and pepper to taste
DRESSING
100 ml olive oil
1 teaspoon garlic chopped
1 teaspoon mixed herbs
INSTRUCTIONS
Place all salad ingredients in a salad bowl and mix well together.
Pour dressing over and mix again.
Place in fridge till ready to serve.
