White Cake

Ingredients:
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 3/4 cups sugar
- 5 large egg whites, at room temperature
- 2 teaspoons vanilla extract
- 1 cup buttermilk, at room temperature
- 1/3 cup sour cream, at room temperature
Directions:
- Preheat oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy.
- Add egg whites and vanilla, beating well after each addition.
- Alternately add flour mixture and buttermilk to the butter mixture, beginning and ending with flour.
- Stir in sour cream.
- Divide batter evenly between prepared pans and smooth tops.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool cakes in pans for 10 minutes, then remove to wire racks to cool completely.
