Chocolate Slab Cake

  • 5 large eggs, at room temperature
  • 1 cup sugar
  • 1 cup oil
  • 1 cup warm water
  • ½ cup cocoa powder
  • 2 cups cake flour
  • 4 teaspoons baking powder
  1. Preheat the oven to 180°C
  2. Grease an oven tray, sprinkle with flour to prevent sticking.
  3. Using a large mixing bowl whisk together the eggs, sugar and oil until the sugar has dissolved.
  4. Dissolve the cocoa in the warm water.
  5. Mix this into the eggs mixture.
  6. Fold in the flour and baking powder.
  7. Pour the mixture into the greased tray and bake for 20 minutes or until a skewer inserted comes out clean and dry.
  8. Cool completely before frosting / decorating. For this cake I spread a generous layer of Nestle dessert cream and dark chocolate over the cake followed by chocolate flakes.
  9. Warm 1 tin of dessert cream add a slab of chocolate, chopped or broken into small pieces.
  10. Allow the chocolate to melt in the warm cream, stir well.
  11. Spread over the cake.
  12. Cut into squares and enjoy.
  13. You may decorate with fruit as I did in picture for that special occasion (optional)
