Chocolate Slab Cake
- 5 large eggs, at room temperature
- 1 cup sugar
- 1 cup oil
- 1 cup warm water
- ½ cup cocoa powder
- 2 cups cake flour
- 4 teaspoons baking powder
- Preheat the oven to 180°C
- Grease an oven tray, sprinkle with flour to prevent sticking.
- Using a large mixing bowl whisk together the eggs, sugar and oil until the sugar has dissolved.
- Dissolve the cocoa in the warm water.
- Mix this into the eggs mixture.
- Fold in the flour and baking powder.
- Pour the mixture into the greased tray and bake for 20 minutes or until a skewer inserted comes out clean and dry.
- Cool completely before frosting / decorating. For this cake I spread a generous layer of Nestle dessert cream and dark chocolate over the cake followed by chocolate flakes.
- Warm 1 tin of dessert cream add a slab of chocolate, chopped or broken into small pieces.
- Allow the chocolate to melt in the warm cream, stir well.
- Spread over the cake.
- Cut into squares and enjoy.
- You may decorate with fruit as I did in picture for that special occasion (optional)
