Microwave Custard Slices

Ingredients

  • Ready made puff pastry
  • 1 cup Sugar
  • 125ml Custard Powder
  • 1 litre Milk
  • 80ml Butter
  • 20ml Vanilla Essence
  1. Preheat your oven to 200°C
  2. Line 2 baking trays with baking paper
  3. Unroll your puff pastry and cut into 2 rectangles, any size you want.
  4. Place each pastry onto a lined baking tray.
  5. Cut the pastry with a pizza cutter for neat line.
  6. Cover each pastry square with some more parchment paper and then place a baking tray on top, this stops the pastry puffing up too much whilst baking.
  7. Bake the pastry for 20-25 minutes until golden brown and place on a cooling rack to cool completely.

Meanwhile make your filling:

  1. Mix 1 cup sugar with
  2. 125 ml custard powder
  3. Slowly blend in 1 liter milk
  4. Add 80ml butter
  5. Add 20 ml vanilla essence Microwave for 10 min on high.
  6. Whisk the mixture every 2 minutes.
  7. The custard is perfect when the mixture makes patterns when whisking.
  8. Cool down the custard!
  9. Pour cool custard mixture over 1 of the baked & cooled pastry sheets as the bottom layer.
  10. Add 2nd pastry on top.
  11. Let it cool.
  12. Mix 1 cup icing sugar with 1 tablespoon boiling water and some lemon juice.
  13. Pour over top
  14. You can also add flaked almonds
