Microwave Custard Slices
Ingredients
- Ready made puff pastry
- 1 cup Sugar
- 125ml Custard Powder
- 1 litre Milk
- 80ml Butter
- 20ml Vanilla Essence
- Preheat your oven to 200°C
- Line 2 baking trays with baking paper
- Unroll your puff pastry and cut into 2 rectangles, any size you want.
- Place each pastry onto a lined baking tray.
- Cut the pastry with a pizza cutter for neat line.
- Cover each pastry square with some more parchment paper and then place a baking tray on top, this stops the pastry puffing up too much whilst baking.
- Bake the pastry for 20-25 minutes until golden brown and place on a cooling rack to cool completely.
Meanwhile make your filling:
- Mix 1 cup sugar with
- 125 ml custard powder
- Slowly blend in 1 liter milk
- Add 80ml butter
- Add 20 ml vanilla essence Microwave for 10 min on high.
- Whisk the mixture every 2 minutes.
- The custard is perfect when the mixture makes patterns when whisking.
- Cool down the custard!
- Pour cool custard mixture over 1 of the baked & cooled pastry sheets as the bottom layer.
- Add 2nd pastry on top.
- Let it cool.
- Mix 1 cup icing sugar with 1 tablespoon boiling water and some lemon juice.
- Pour over top
- You can also add flaked almonds
