Orange Butter Cake

Ingredients

  • 125g butter
  • 1 cup sifted castor sugar
  • 2 eggs
  • 2 tsp orange rind
  • 2 cups sifted cake flour
  • 3 tsp baking powder
  • 3/4 cup milk

Method

  1. Preheat your oven to 180 deg
  2. Grease and line a 1 x 20cm round baking tin
  3. Cream the butter and sugar until light in colour
  4. Beat in the eggs and rind
  5. Sift in the dry ingredients
  6. Add the milk and mix until smooth
  7. Bake for 35 minutes

Icing

  • 125g butter
  • 2 cups sifted icing sugar
  • 1 tsp orange rind
  • 1/2 tsp vanilla essence
  1. Cream the butter
  2. Add the icing sugar, orange rind and vanilla essence.
  3. Beat until smooth and creamy
