Ingredients:

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces mascarpone cheese, at room temperature
  • 1/2 cup brewed espresso or strong coffee, cooled
  • 1 package (7.5 ounces) Biscoff cookies
  • Cocoa powder for dusting

Instructions:

  1. In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Add the mascarpone cheese to the whipped cream and beat until smooth and creamy.
  3. Dip each Biscoff cookie into the espresso mixture, coating both sides.
  4. Arrange a layer of dipped cookies in the bottom of an 8×8-inch baking dish.
  5. Spread half of the mascarpone mixture over the layer of cookies.
  6. Repeat with another layer of dipped cookies and the remaining mascarpone mixture.
  7. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.
  8. Before serving, dust the top of the tiramisu with cocoa powder.

Notes:

You can adjust the sweetness of the tiramisu by adding more or less powdered sugar to the whipped cream.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
