Ingredients:
For the Cake:
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 large eggs
- 3/4 cup granulated sugar
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- Juice of 1/2 lemon
- For the Cream Cheese Filling:
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar, sifted
- 1 teaspoon vanilla extract
- Zest of 1/2 lemon
Directions:
- Preheat Oven and Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Line a jelly roll pan with parchment paper and lightly grease the sides.
- Mix Dry Ingredients:
- In a small bowl, whisk together flour, baking powder, and salt. Set aside.
- Beat Eggs and Sugar:
- In a large bowl, beat eggs and granulated sugar with an electric mixer on high speed until thick and pale, about 4 minutes.
- Mix in vegetable oil, vanilla extract, lemon zest, and lemon juice.
- Add Dry Ingredients:
- Gently fold in the flour mixture until just combined.
- Bake:
- Pour the batter into the prepared pan, spreading evenly.
- Bake for 12-14 minutes, or until the cake springs back when lightly touched.
- Roll Cake:
- Immediately after baking, turn the cake onto a clean kitchen towel dusted with powdered sugar.
- Peel off the parchment paper.
- Starting at one short end, roll the cake up in the towel.
- Cool completely on a wire rack.
