Old Fashioned Rice Pudding
Ingredients:
- 1/2 cup white rice
- 4 cups whole milk
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup raisins (optional)
- Ground cinnamon, for garnish
Directions:
- Rinse the white rice under cold water until the water runs clear.
- Drain well.
- In a medium saucepan, combine the rinsed rice and whole milk.
- Bring to a boil over medium heat, stirring frequently to prevent the rice from sticking to the bottom of the pan.
- Reduce the heat to low and simmer the rice mixture, uncovered, stirring occasionally, for about 30-35 minutes, or until the rice is tender and the mixture has thickened to a pudding-like consistency.
- Stir in the granulated sugar, salt, vanilla extract, ground cinnamon, and ground nutmeg.
- If using raisins, stir them in as well.
- Continue to cook the rice pudding over low heat for an additional 5-10 minutes, stirring constantly, until the sugar is fully dissolved and the pudding is creamy and smooth.
- Remove the saucepan from the heat and let the rice pudding cool slightly.
- Transfer the rice pudding to individual serving bowls or a large serving dish.
- Sprinkle with ground cinnamon for garnish.
- Serve the Mom’s old fashioned rice pudding warm or chilled, depending on your preference.
