Raspberry White Chocolate Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup frozen raspberries, coarsely chopped

Directions:

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add to the creamed mixture and mix well.
  6. Fold in the white chocolate chips and raspberries.
  7. Drop by rounded spoonfuls onto the prepared baking sheets.
  8. Bake for 10-12 minutes or until lightly golden.
  9. Let cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
