Ultimate Lemon Cake
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups whole milk
- 4 large eggs
- 2 cups sugar
- 1/2 cup butter, melted
- 1/4 cup lemon juice
- Zest of 1 lemon
- 1 teaspoon vanilla extract
Lemon Icing:
- 2 cups powdered sugar
- 1/4 cup lemon juice
- Zest of 1 lemon
Directions:
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- Set aside.
- In a large bowl, beat together the milk, eggs, sugar, melted butter, lemon juice, lemon zest, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
- For the icing, whisk together powdered sugar, lemon juice, and zest until smooth.
- Spread over the cooled cakes.
