Ultimate Lemon Cake

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups whole milk
  • 4 large eggs
  • 2 cups sugar
  • 1/2 cup butter, melted
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract

Lemon Icing:

  • 2 cups powdered sugar
  • 1/4 cup lemon juice
  • Zest of 1 lemon

Directions:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. Set aside.
  4. In a large bowl, beat together the milk, eggs, sugar, melted butter, lemon juice, lemon zest, and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
  9. For the icing, whisk together powdered sugar, lemon juice, and zest until smooth.
  10. Spread over the cooled cakes.
