Vanilla Birthday Cake

Ingredients:

For the Cake:

  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 1 1/2 cups self-rising flour
  • 1 1/4 cups all-purpose flour
  • 1 cup milk
  • 1 teaspoon vanilla extract

For the Frosting:

  • 1 cup unsalted butter, softened
  • 8 cups confectioners’ sugar
  • 1/2 cup milk
  • 2 teaspoons vanilla extract

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour three 9-inch round cake pans.
  3. Cake:
    1. In a large bowl, cream the butter and sugar until light and fluffy.
    2. Add eggs, one at a time, beating well after each addition.
    3. Combine the flours and add to the creamed mixture alternately with milk, beginning and ending with flour.
    4. Mix in vanilla.
    5. Divide batter among prepared pans.
    6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
    7. Cool in pans for 10 minutes, then remove to wire racks to cool completely.
  4. Frosting:
    1. In a large bowl, beat butter until creamy.
    2. Gradually add confectioners’ sugar, milk, and vanilla, beating until smooth and spreadable.
  5. Assemble the cake, spreading frosting between layers and over the top and sides of the cake.
