Vanilla Birthday Cake
Ingredients:
For the Cake:
- 1 cup unsalted butter, softened
- 2 cups sugar
- 4 large eggs
- 1 1/2 cups self-rising flour
- 1 1/4 cups all-purpose flour
- 1 cup milk
- 1 teaspoon vanilla extract
For the Frosting:
- 1 cup unsalted butter, softened
- 8 cups confectioners’ sugar
- 1/2 cup milk
- 2 teaspoons vanilla extract
Directions:
- Preheat oven to 350°F (175°C).
- Grease and flour three 9-inch round cake pans.
- Cake:
- In a large bowl, cream the butter and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Combine the flours and add to the creamed mixture alternately with milk, beginning and ending with flour.
- Mix in vanilla.
- Divide batter among prepared pans.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Cool in pans for 10 minutes, then remove to wire racks to cool completely.
- Frosting:
- In a large bowl, beat butter until creamy.
- Gradually add confectioners’ sugar, milk, and vanilla, beating until smooth and spreadable.
- Assemble the cake, spreading frosting between layers and over the top and sides of the cake.
