Zesty Lemon Bliss Cheesecake
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 4 packages (8 ounces each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2 lemons, zest and juice
- 1/4 cup sour cream
Directions:
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar.
- Press into the bottom of a 9-inch springform pan.
- Beat cream cheese, 1 cup sugar, and vanilla extract in a large bowl until smooth.
- Add eggs one at a time, beating well after each addition.
- Stir in lemon zest, lemon juice, and sour cream until well combined.
- Pour over the crust.
- Bake for 55-60 minutes, or until the center is almost set. Let cool in pan on a wire rack for 10 minutes.
- Carefully run a knife around the edge of the pan to loosen; cool 1 hour longer.
- Refrigerate overnight.
