Lemon Butter Chicken

Ingredients:

  • 4 chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 3 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 1 tablespoon honey
  • 2 teaspoons garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup heavy cream
  • 2 tablespoons fresh parsley, chopped for garnish

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper.
  3. Heat olive oil in a large oven-proof skillet over medium-high heat.
  4. Add chicken and sear both sides until golden, about 2-3 minutes per side.
  5. Remove chicken and set aside.
  6. Melt butter in the skillet, add garlic, thyme, oregano, and red pepper flakes.
  7. Cook for 1-2 minutes.
  8. Stir in chicken broth, lemon juice, and honey.
  9. Bring to a boil, then reduce heat and simmer for 5 minutes.
  10. Return chicken to the skillet.
  11. Bake in the oven for 25-30 minutes, or until chicken is cooked through.
  12. Remove from oven, stir in heavy cream, and sprinkle with parsley before serving.
