Lemon Butter Chicken
Ingredients:
- 4 chicken breasts, boneless and skinless
- 1 tablespoon olive oil
- Salt and pepper to taste
- 3 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- 1 tablespoon honey
- 2 teaspoons garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/4 cup heavy cream
- 2 tablespoons fresh parsley, chopped for garnish
Directions:
- Preheat the oven to 400°F (200°C).
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large oven-proof skillet over medium-high heat.
- Add chicken and sear both sides until golden, about 2-3 minutes per side.
- Remove chicken and set aside.
- Melt butter in the skillet, add garlic, thyme, oregano, and red pepper flakes.
- Cook for 1-2 minutes.
- Stir in chicken broth, lemon juice, and honey.
- Bring to a boil, then reduce heat and simmer for 5 minutes.
- Return chicken to the skillet.
- Bake in the oven for 25-30 minutes, or until chicken is cooked through.
- Remove from oven, stir in heavy cream, and sprinkle with parsley before serving.
