Tropical Pineapple Paradise Cake
Ingredients:
- 3 cups all-purpose flour
- 3 cups granulated sugar
- 1 cup unsalted butter, softened
- 1 cup sour cream
- 2/3 cup crushed pineapple, drained
- 1/3 cup pineapple juice
- 5 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Directions:
- Preheat oven to 350°F (175°C).
- Grease and flour three 8-inch round cake pans.
- In a large mixing bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Stir in vanilla extract.
- In a separate bowl, sift together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture, alternating with sour cream and pineapple juice.
- Fold in crushed pineapple until evenly distributed.
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove cakes from the oven and let them cool in the pans for 10 minutes before transferring to wire racks to cool completely.
