Eclair Cookies
Choux Pastry Delights with Creamy Filling and Chocolate Glaze
Ingredients:
- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup semisweet chocolate chips
- 2 tablespoons heavy cream
Directions:
- Preheat oven to 425°F (220°C).
- In a medium saucepan, bring water and butter to a boil.
- Add flour and salt all at once, stirring vigorously.
- Cook and stir until mixture forms a ball.
- Remove from heat and let cool slightly.
- Add eggs, one at a time, beating well with a wooden spoon after each addition until smooth.
- Drop dough by heaping tablespoons onto a greased baking sheet, shaping each into an elongated eclair shape.
- Bake for 20-25 minutes or until golden brown.
- Remove to wire racks to cool completely.
- For the filling, beat 1 cup heavy cream, powdered sugar, and vanilla extract in a bowl until stiff peaks form.
- Cut a small slit in the side of each eclair and fill with cream mixture.
- For the glaze, melt chocolate chips with 2 tablespoons heavy cream in a small saucepan over low heat, stirring until smooth.
- Drizzle over filled eclairs.
