Hawaiian Shoyu Chicken

Ingredients:

  • 4 boneless, skinless chicken thighs
  • 1 cup soy sauce (shoyu)
  • 1 cup brown sugar
  • 1/2 cup water
  • 1/4 cup pineapple juice
  • 2 tablespoons ketchup
  • 1 tablespoon fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1/2 teaspoon crushed red pepper flakes
  • Green onions and sesame seeds for garnish

Directions:

  1. In a large bowl, whisk together soy sauce (shoyu), brown sugar, water, pineapple juice, ketchup, ginger, garlic, sesame oil, and red pepper flakes.
  2. Place the chicken thighs in the bowl and make sure they are well coated with the marinade.
  3. Cover and refrigerate for at least 2 hours, or overnight for best results.
  4. Preheat your grill, grill pan, or skillet over medium-high heat.
  5. Remove the chicken from the marinade, reserving the marinade.
  6. Grill the chicken for 6-8 minutes on each side, or until fully cooked and internal temperature reaches 165°F (74°C).
  7. While the chicken is grilling, pour the reserved marinade into a small saucepan. Bring to a boil, then reduce heat and simmer until
  8. the sauce thickens, about 10 minutes.
  9. Brush the cooked chicken with the thickened sauce and cook for an additional 1-2 minutes on each side.
  10. Serve the chicken hot, garnished with sliced green onions and sesame seeds.
