Pineapple Chicken and Rice
Ingredients:
- 2 boneless, skinless chicken breasts, cut into bite-size pieces
- 1 tablespoon olive oil
- 1 cup pineapple chunks
- 1 bell pepper, chopped (any color)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup rice
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 2 tablespoons fresh cilantro, chopped (for garnish)
- 1/4 cup green onions, sliced (for garnish)
Directions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken pieces, season with salt and pepper, and cook until browned.
- Remove from the skillet and set aside.
- In the same skillet, add the pineapple chunks, bell pepper, onion, and garlic.
- Cook until the vegetables are soft.
- Add the rice, chicken broth, soy sauce, honey, and ground ginger.
- Stir well to combine.
- Return the chicken to the skillet, bring to a boil, then reduce heat to low.
- Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork, then garnish with cilantro and green onions before serving.
