Pineapple Chicken and Rice

Ingredients:

  • 2 boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1 cup pineapple chunks
  • 1 bell pepper, chopped (any color)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 1/4 cup green onions, sliced (for garnish)

Directions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces, season with salt and pepper, and cook until browned.
  3. Remove from the skillet and set aside.
  4. In the same skillet, add the pineapple chunks, bell pepper, onion, and garlic.
  5. Cook until the vegetables are soft.
  6. Add the rice, chicken broth, soy sauce, honey, and ground ginger.
  7. Stir well to combine.
  8. Return the chicken to the skillet, bring to a boil, then reduce heat to low.
  9. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  10. Remove from heat and let it sit, covered, for 5 minutes.
  11. Fluff the rice with a fork, then garnish with cilantro and green onions before serving.
