Baklava Cheesecake

Ingredients:

For the crust:

  • 1 cup finely ground walnuts
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the cheesecake:

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs

For the baklava layer:

  • 1 cup chopped walnuts
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 8 sheets phyllo dough, thawed
  • 1/2 cup unsalted butter, melted

For the syrup:

  • 1/2 cup honey
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 teaspoon lemon juice

For garnish:

  • Whole walnuts
  • Fresh mint leaves

Instructions:

  1. Crust:
    1. Combine walnuts, crumbs, sugar, and butter.
    2. Press into a springform pan.
  2. Cheesecake:
    1. Beat cream cheese, sugar, and vanilla.
    2. Add eggs.
    3. Pour over crust.
  3. Baklava Layer:
    1. Layer phyllo with butter, top with walnut mixture.
    2. Cut, place on cheesecake.
  4. Bake:
    1. At 325°F for 60 mins.
    2. Cool.
  5. Syrup:
    1. Boil honey, water, sugar, lemon.
    2. Cool slightly, pour over cheesecake.
  6. Garnish:
    1. Decorate with walnuts and mint.
