Chicken Pot Pie Noodle Skillet
Hearty Skillet Chicken Pot Pie with Noodles
Ingredients:
- 2 tablespoons unsalted butter
- 1 small onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 2 teaspoons fresh thyme leaves
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 cups cooked chicken, shredded
- 8 ounces egg noodles
- 1 cup frozen peas
- 1/2 cup grated Parmesan cheese
Directions:
- Melt butter in a large skillet over medium heat.
- Add onion, carrots, and celery, cooking until softened, about 5 minutes.
- Stir in garlic until fragrant, about 1 minute.
- Sprinkle flour over the vegetables, stirring to coat.
- Gradually whisk in chicken broth and heavy cream, bringing to a simmer.
- Add thyme, salt, and pepper.
- Stir in chicken and noodles.
- Reduce heat, cover, and simmer until noodles are tender, about 8-10 minutes.
- Stir in frozen peas and Parmesan cheese until heated through and cheese is melted, about 2 minutes.
- Serve immediately.
