Gluten Free Casserole
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 2 cups cooked rice
- 1 cup shredded cheddar cheese
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until it’s no longer pink. Drain any excess fat.
- Add the diced onion, minced garlic, and diced bell pepper to the skillet. Cook for about 5 minutes, until the vegetables are softened.
- Stir in the diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Simmer for 10 minutes.
- In a large bowl, combine the cooked rice and the meat mixture.
- Spread the mixture into a greased 9×13 inch baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
