Gluten Free Casserole

  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until it’s no longer pink. Drain any excess fat.
  3. Add the diced onion, minced garlic, and diced bell pepper to the skillet. Cook for about 5 minutes, until the vegetables are softened.
  4. Stir in the diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Simmer for 10 minutes.
  5. In a large bowl, combine the cooked rice and the meat mixture.
  6. Spread the mixture into a greased 9×13 inch baking dish.
  7. Sprinkle the shredded cheddar cheese evenly over the top.
  8. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  9. Let it cool for a few minutes before serving.
