Mini Baked Parmesan Potato Rounds
Ingredients:
- 12 small potatoes, sliced into rounds
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Directions:
- Preheat oven to 400°F (200°C).
- Toss potato rounds with olive oil, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Arrange in a single layer on a baking sheet.
- Bake for 25-30 minutes, or until golden brown and crispy.
- Garnish with fresh parsley before serving.
