Mini Baked Parmesan Potato Rounds

Ingredients:

  • 12 small potatoes, sliced into rounds
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Directions:

  1. Preheat oven to 400°F (200°C).
  2. Toss potato rounds with olive oil, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  3. Arrange in a single layer on a baking sheet.
  4. Bake for 25-30 minutes, or until golden brown and crispy.
  5. Garnish with fresh parsley before serving.
