Cornish Split
- 330 g Bread flour
- 300 ml milk
- 1/2 tsp salt
- 4 tsp instant yeast
- 1 tbsp sugar
- 2 tbsp butter
- Add dry ingredients to stand mixer
- Add butter to milk and microwave for 30 seconds
- Using the hook and with mixer running slowly add milk
- Knead on medium low until you get a soft tacky dough
- Move the dough to a large greased bowl and cover
- Rise for 1 hour or until it doubles
- Dump onto a floured board and divide into 8 equal pieces.
- Ball each piece and place on parchment covered baking sheet
- Preheat oven to 190c/375f
- Let buns rise for 15 minutes
- Bake for 15-20 minutes until golden.
- Cool on a rack
- Split the buns and add jam and clotted cream
- Dust tops with powdered sugar
Notes:
Strawberry jam is traditional but I prefer raspberry.
Whipped cream can be used instead of clotted cream.
Spilt the bun at an angle and not quite all the way through.
