Shrimp Fried Rice
Ingredients:
- 2 cups cooked and chilled rice
- 1 lb shrimp, peeled and deveined
- 2 tbsp vegetable oil
- 2 eggs, lightly beaten
- 1 medium onion, finely chopped
- 1 cup frozen peas and carrots, thawed
- 2-3 tbsp soy sauce
- 1 tsp sesame oil
- 2 green onions, thinly sliced
- Salt and pepper to taste
- Optional: 1 clove garlic, minced
Directions:
- Heat 1 tablespoon of oil in a large skillet over medium-high heat.
- Add shrimp and cook until pink, about 2-3 minutes per side.
- Remove shrimp and set aside.
- In the same skillet, add another tablespoon of oil. Sauté onions (and garlic, if using) until translucent.
- Push onions to the side of the skillet and add beaten eggs.
- Scramble eggs until just set.
- Add rice, peas and carrots, and cooked shrimp.
- Stir to combine.
- Drizzle soy sauce and sesame oil over the rice mixture.
- Stir fry for a few minutes until everything is heated through and well combined.
- Season with salt and pepper.
- Garnish with green onions before serving.
