Vanilla Crepes
Ingredients:
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/4 cups milk
- 2 tablespoons melted butter
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
- In a large mixing bowl, whisk together the flour, sugar, and salt until well combined.
- In a separate bowl, beat the eggs, then add the milk, melted butter, and vanilla extract.
- Whisk until smooth.
- Gradually pour the wet ingredients into the dry ingredients, whisking constantly to avoid lumps.
- Once the batter is smooth and lump-free, let it rest for 10-15 minutes to allow the flour to fully hydrate.
- Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with butter or cooking spray.
- Pour a small ladleful of batter into the center of the pan, swirling it around to spread the batter thinly and evenly.
- Cook the crepe for about 1-2 minutes, or until the edges start to turn golden brown and lift easily from the pan.
- Carefully flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side.
- Transfer the cooked crepe to a plate and repeat the process with the remaining batter, stacking the crepes as you go.
- Serve the vanilla crepes warm with your favorite fillings and toppings.
