Tangy Sweet and Sour Meatballs

Ingredients:

  • 1-1/2 pounds ground beef
  • 1/4 cup packed brown sugar
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 1/4 cup seasoned bread crumbs
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 can (20 ounces) pineapple tidbits
  • 1/2 cup water
  • 1/2 cup white vinegar
  • 1 tablespoon soy sauce
  • 1/2 cup sugar
  • 1/4 cup ketchup
  • 2 tablespoons cornstarch

Directions:

  1. In a large bowl, combine the first eight ingredients.
  2. Shape into 1-1/2-in. balls.
  3. In a large skillet, heat olive oil over medium heat.
  4. Brown meatballs in batches; drain.
  5. Drain pineapple, reserving juice; set aside. In the same skillet, combine the water, vinegar, soy sauce, sugar, ketchup, and reserved pineapple juice.
  6. Bring to a boil.
  7. Return meatballs to the skillet. Reduce heat; cover and simmer for 10 minutes.
  8. Combine cornstarch and cold water until smooth; stir into skillet.
  9. Bring to a boil; cook and stir for 2 minutes or until thickened.
  10. Add pineapple; heat through.
