Tuskan Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 cup Parmesan cheese, grated
- 1 cup spinach, roughly chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup mushrooms, sliced
Instructions:
Preparation of Chicken:
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken and cook until golden brown and cooked through, about 5-7 minutes per side.
- Remove the chicken from the skillet and set aside.
Creating the Sauce:
- In the same skillet, add the heavy cream, chicken broth, garlic powder, and Italian seasoning.
- Stir to combine and bring to a simmer.
- Add the Parmesan cheese and stir until the cheese has melted and the sauce has thickened slightly, about 2-3 minutes.
Adding Vegetables:
- To the sauce, add the spinach, sun-dried tomatoes, and mushrooms.
- Cook until the spinach has wilted and the vegetables are heated through, about 2-4 minutes.
Combining Chicken with Sauce:
- Return the chicken to the skillet and spoon some of the sauce and vegetables over the top.
- Cook for an additional 2-3 minutes to ensure the chicken is heated through and coated in the sauce.
Serving:
- Serve the Tuscan Chicken hot, with extra Parmesan cheese sprinkled on top if desired.
- This dish pairs beautifully with a side of pasta, rice, or a simple green salad.
