Tuskan Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup Parmesan cheese, grated
  • 1 cup spinach, roughly chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup mushrooms, sliced

Instructions:

Preparation of Chicken:

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes per side.
  4. Remove the chicken from the skillet and set aside.

Creating the Sauce:

  1. In the same skillet, add the heavy cream, chicken broth, garlic powder, and Italian seasoning.
  2. Stir to combine and bring to a simmer.
  3. Add the Parmesan cheese and stir until the cheese has melted and the sauce has thickened slightly, about 2-3 minutes.

Adding Vegetables:

  1. To the sauce, add the spinach, sun-dried tomatoes, and mushrooms.
  2. Cook until the spinach has wilted and the vegetables are heated through, about 2-4 minutes.

Combining Chicken with Sauce:

  1. Return the chicken to the skillet and spoon some of the sauce and vegetables over the top.
  2. Cook for an additional 2-3 minutes to ensure the chicken is heated through and coated in the sauce.

Serving:

  1. Serve the Tuscan Chicken hot, with extra Parmesan cheese sprinkled on top if desired.
  2. This dish pairs beautifully with a side of pasta, rice, or a simple green salad.
