Ingredients:

  • 8 ounces of pasta (penne, fusilli, or your favorite shape)
  • 1 pint of cherry tomatoes, halved
  • 8 ounces of fresh mozzarella cheese, diced
  • 1/4 cup of fresh basil leaves, thinly sliced
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper to taste

Instructions:

  1. Cook the Pasta:
    1. Cook the pasta according to the package instructions until al dente.
    2. Drain and rinse under cold water to stop the cooking process.
    3. Allow it to cool completely.
  2. Prepare the Salad:
    1. In a large bowl, combine the cooked pasta, halved cherry tomatoes, diced fresh mozzarella cheese, and thinly sliced basil leaves.
  3. Make the Dressing:

  4. Combine and Toss:
