Crispy Smashed Potatoes
Ingredients:
- 1.5kg (3.3 lbs) baby potatoes
- 60ml (1/4 cup) olive oil
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh rosemary, finely chopped
- 2 cloves garlic, minced
Directions:
- Preheat your oven to 220°C (430°F).
- Boil the potatoes in a large pot of salted water for about 25-30 minutes until they are completely tender.
- Drain the potatoes and let them cool slightly. Once cool enough to handle, place them on a baking sheet.
- Use a potato masher or the bottom of a glass to gently smash each potato to about a 1.5cm (half an inch) thickness.
- Drizzle the olive oil evenly over the potatoes, and then sprinkle with salt, pepper, chopped rosemary, and minced garlic.
- Bake in the preheated oven for 25-30 minutes, or until they are golden and crispy.
