African Chicken Peanut Stew
Ingredients:
- 1.5 lb chicken thighs
- ½ cup tomato sauce
- 1 red bell pepper, chopped
- ½ cup peanut butter
- ¼ cup olive oil
- ½ onion, chopped
- 1 teaspoon cayenne pepper
- 1 teaspoon bouillon powder
- 2 cups chicken stock or water
- 1 teaspoon black pepper
- 1 teaspoon salt, or to taste
Directions:
- Wash and pat dry the chicken thighs.
- Season with salt and pepper.
- In a skillet, brown the chicken in olive oil over medium-high heat, then set aside.
- Sauté onions and red bell pepper in a soup pot with olive oil.
- Add tomato sauce and spices, excluding salt.
- Simmer for a few minutes.
- Pour in chicken stock, add chicken, and simmer for 10 minutes.
- Adjust salt to taste.
- Stir in peanut butter until well mixed and cook until the stew thickens.
