Shepherd’s Pie

Ingredients:
- 1 pound ground beef
- 1 cup diced carrots
- 2 cups mashed potatoes
- 1 cup diced onions
- 1 cup corn kernels
- 1 cup diced tomatoes
- 2 tablespoons tomato paste
- 2 cloves garlic, minced
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup milk
- 2 tablespoons butter
Instructions:
- Preheat oven:
- Preheat the oven to 375°F (190°C).
- Grease a baking dish with butter or cooking spray.
- Cook ground beef:
- In a large skillet, heat olive oil over medium heat.
- Add diced onions and minced garlic, and cook until softened.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Add vegetables:
- Stir in diced carrots, corn kernels, diced tomatoes, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, salt, and black pepper.
- Cook for another 5 minutes, until vegetables are slightly softened.
- Prepare mashed potatoes:
- While the beef mixture is cooking, prepare mashed potatoes.
- Boil peeled and diced potatoes until fork-tender.
- Drain and mash with butter and milk until smooth.
- Season with salt and pepper to taste.
- Assemble shepherd’s pie:
- Transfer the beef and vegetable mixture into the greased baking dish.
- Spread the mashed potatoes evenly over the top.
- Bake:
- Place the baking dish in the preheated oven and bake for 30 minutes, or until the mashed potatoes are golden brown and the filling is bubbling.
- Serve:
- Remove from the oven and let it cool for a few minutes before serving.
