Milk Tart Cupcakes (Melktert Cupcakes)
These cupcakes bring the flavors of milk tart into a fun, bite-sized treat.
Ingredients:
For the cupcakes:
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1/2 cup milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
For the filling:
- 1 cup milk
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1 egg
- 1 teaspoon vanilla extract
- Ground cinnamon (for dusting)
Instructions:
- Preheat the oven to 180°C (350°F).
- Line a muffin tin with cupcake liners.
- In a bowl, cream butter and sugar until light.
- Add eggs, milk, and vanilla.
- Mix well.
- Gradually add flour and baking powder, stirring until smooth.
- Fill cupcake liners halfway.
- In a saucepan, heat milk and sugar.
- In a bowl, mix cornstarch with a little cold milk, then add to the hot mixture, stirring until thickened.
- Remove from heat and mix in egg and vanilla.
- Pour the filling over the cupcakes and bake for 20-25 minutes.
- Cool and dust with cinnamon before serving.
