Cheesy Mashed Potato Puffs
- 2 cups (room temperature) Mashed Potatoes
- 3 large Eggs, beaten
- 1 cup Shredded Cheese, for mixture and topping
- 1/4 cup Chives, finely diced
- Preheat your oven to 400°F.
- Grease your muffin pan well.
- Mix all ingredients until smooth and well-combined.
- Scoop the mixture into the greased muffin cups, about three-quarters full.
- Top with a bit more cheese for a crunchy finish.
- Bake for 20-25 minutes or until golden brown and set.
- Cool for a few minutes, then remove each puff from the pan.
- Serve warm with sour cream or fresh herbs if you like.
