Cheesy Mashed Potato Puffs

  • 2 cups (room temperature) Mashed Potatoes
  • 3 large Eggs, beaten
  • 1 cup Shredded Cheese, for mixture and topping
  • 1/4 cup Chives, finely diced
  1. Preheat your oven to 400°F.
  2. Grease your muffin pan well.
  3. Mix all ingredients until smooth and well-combined.
  4. Scoop the mixture into the greased muffin cups, about three-quarters full.
  5. Top with a bit more cheese for a crunchy finish.
  6. Bake for 20-25 minutes or until golden brown and set.
  7. Cool for a few minutes, then remove each puff from the pan.
  8. Serve warm with sour cream or fresh herbs if you like.
