Sticky Honey Gochujang Chicken

Ingredients:
- 1.5 lbs (700g) boneless, skinless chicken thighs or breasts, cut into chunks
- Salt and pepper, to taste
- 1 tbsp oil (vegetable or sesame)
For the sauce:
- 3 tbsp gochujang (Korean red chili paste)
- 2 tbsp soy sauce
- 3 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp brown sugar (optional, for extra sweetness)
- 2 tbsp water
To serve:
- Sesame seeds, for garnish
- Chopped green onions, for garnish
- Steamed rice or noodles
Directions:
- In a bowl, whisk together all sauce ingredients until well combined. Set aside.
- Season chicken pieces with salt and pepper.
- Heat oil in a skillet over medium-high heat.
- Add chicken and cook for 5–6 minutes until browned and nearly cooked through.
- Pour in the gochujang sauce and stir to coat the chicken.
- Reduce heat to medium and simmer for 6–8 minutes until the sauce thickens and becomes sticky, and the chicken is cooked through.
- Serve hot over rice or noodles.
- Garnish with sesame seeds and green onions.
