Ingredients (makes 1 loaf):
- 1 cup cottage cheese
- 4 large eggs
- 1 cup almond flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 tablespoon olive oil (plus extra for greasing)
Steps:
- Preheat oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
- Blend cottage cheese, eggs, and olive oil until smooth.
- In a bowl, combine almond flour, baking powder, and salt.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Pour into the loaf pan and smooth the top.
- Bake for 35–40 minutes until golden and firm in the center.
