Classic Jam Thumbprint Cookies

Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- Jam or preserves of your choice (raspberry and apricot are classics)
- Powdered sugar for dusting (optional)
Instructions
- Prep the Oven and Pan:
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Make the Dough:
- In a large bowl, use a hand mixer to beat the softened butter and granulated sugar until light and fluffy.
- Beat in the egg yolk and vanilla extract.
- Gradually add the flour and salt, mixing on low speed until a soft dough forms.
- Form the Cookies:
- Roll the dough into 1-inch balls and place them on the prepared baking sheet.
- Create the Thumbprint:
- Using your thumb or the back of a small measuring spoon, gently press an indentation into the center of each cookie.
- The indentation should be deep enough to hold the jam.
- Fill and Bake:
- Fill each indentation with about 1/2 teaspoon of jam.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Cool and Finish:
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Dust lightly with powdered sugar before serving, if desired.
