Honey Pineapple Salmon
Ingredients:
- 4 salmon fillets (about 6 oz each)
- 1 cup fresh pineapple, diced (or use canned pineapple)
- 1/4 cup honey
- 2 tbsp soy sauce (or coconut aminos for a gluten-free option)
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated (or 1/4 tsp ground ginger)
- Salt and black pepper to taste
- Fresh cilantro or green onions for garnish (optional)
- Lime wedges (for serving)
Instructions:
Prepare the Marinade:
- In a medium bowl, whisk together the honey, soy sauce, olive oil, minced garlic, grated ginger, salt, and black pepper until well combined.
Marinate the Salmon:
- Place the salmon fillets in a shallow dish or a resealable plastic bag.
- Pour the marinade over the salmon, ensuring each fillet is coated.
- Add the diced pineapple on top.
- Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Preheat the Grill or Oven:
- If grilling, preheat your grill to medium-high heat.
- If baking, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Cook the Salmon:
Grilling:
- Remove the salmon from the marinade and place the fillets directly on the grill.
- Cook for about 4-6 minutes on each side, or until the salmon flakes easily with a fork.
- Brush with extra marinade during grilling for added flavor.
Baking:
- Place the salmon fillets and the pineapple on the prepared baking sheet.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve:
- Remove the salmon from the grill or oven.
- Garnish with fresh cilantro or green onions if desired.
- Serve with lime wedges on the side.
