German Mushroom Soup
A rich and creamy soup packed with earthy mushrooms, perfect for cold weather.
Ingredients:
- 1 lb (450 g) mushrooms, sliced
- 1 small onion, finely chopped
- 3 cups (720 ml) vegetable broth
- 1 cup (240 ml) heavy cream
- 2 tbsp butter
- 2 tbsp flour
- 1/2 tsp nutmeg
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Melt butter in a pot and sauté onions until soft.
- Add mushrooms and cook until they release their juices.
- Stir in flour and cook for 1 minute.
- Pour in vegetable broth, stirring constantly, and bring to a boil.
- Reduce heat, add heavy cream and nutmeg, and let simmer.
- Season with salt and pepper, garnish with parsley, and serve.
