French Toast Bake

  • 1/2 cup melted butter (1 stick)
  • 1 cup brown sugar
  • 1 loaf of thickly sliced bread
  • 4 eggs
  • 1 1/2 cup milk
  • 1 teaspoon vanilla
  • Powdered sugar for sprinkling
  • Cinnamon for sprinkling
  1. Melt butter in microwave & add brown sugar….stir till mixed.
  2. Pour butter/sugar mix into bottom of 9 x 13 pan….spread around.
  3. Beat eggs, milk, & vanilla
  4. Lay single slices of bread in pan
  5. Spoon 1/2 of egg mixture on bread layer
  6. Sprinkle some cinnamon over bread/eggs
  7. Add 2nd layer of sliced bread
  8. Spoon on remaining egg mixture
  9. Cover & chill in fridge overnight
  10. Bake at 350 for 45 minutes (covered for the first 30 minutes)
  11. Sprinkle with powdered sugar & cinnamon
  12. Serve with warm maple syrup.

Chutney Mayo Chicken & Rice Bake

Ingredients:

  • 1 cup of Spekko Long Grain Parboiled Rice
  • 500g chicken pieces
  • 2 tsp chicken spice
  • 1 cup mayonnaise
  • 1 cup chutney
  • ½ packet brown onion soup
  • 1 cup water

Method:

  1. Preheat the oven to 180 °C and grease a casserole dish.
  2. Pour the uncooked rice into the base of the casserole dish.
  3. Sprinkle the chicken spice over the chicken pieces and rub to coat evenly.
  4. Arrange the seasoned chicken pieces on top of the rice.
  5. In a large mixing bowl, combine the mayonnaise, chutney, brown onion soup and water.
  6. Whisk to combine.
  7. Pour the sauce over the chicken and rice and cover the casserole dish with tin foil.
  8. Bake for 1 hour covered, before removing the tinfoil and baking for another 20 – 30 minutes until the chicken is cooked through and caramelised.
  9. Serve with a side garden salad and enjoy!

Potatobake Bolletjies

  • 1 sakkie vetkoekdeeg (Spar)
  • 1 pk (250g) bacon
  • 2 kp gerasperde kaas
  • 1 pk potatobake
  • 250 ml room
  • 250 ml melk
  1. Knie bacon en 1kp kaas in die deeg in.
  2. Maak die room, melk en potatobake (bacon flavour) aan en gooi die helfde onder in n gesmeerde broodpan.
  3. Rol bolletjies en pak hulle styf teenmekaar in die pan.
  4. Strooi 2de kp kaas oor.
  5. Gooi die laaste potatobake mengsel oor die bolletjies.
  6. Bak in n voorverhitte 180C oond vir 25min / tot goudbruin en gaar.
    ( Het my resep 2x aangemaak) en in oondpan gebak! Pasop net dit rys baie!!

Translation

Potatobake Dumplings

  • 1 bag fatkoek dough (Spar)
  • 1 pk (250g) bacon
  • 2 tbsp grated cheese
  • 1 pk potato bake
  • 250 ml of cream
  • 250 ml of milk
  1. Knead bacon and 1 tbsp of cheese into the dough.
  2. Make the cream, milk and potatobake (bacon flavour) and pour the bottom half into a greased bread pan.
  3. Roll balls and pack them tightly together in the pan.
  4. Sprinkle 2nd tbsp cheese over.
  5. Pour the last potato bake mixture over the balls.
  6. Bake in a preheated 180C oven for 25 minutes / until golden brown and cooked.
    (Made my recipe twice) and baked in an oven pan! Just be careful it rises a lot!!

Chicken Alfredo Bake

Ingredients

  • 16 ounces penne pasta
  • 3 tablespoons salted butter
  • 1 teaspoon garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups (490 g) whole milk
  • 1 cup (238 g) heavy cream
  • 1 cup (100 g) parmesan cheese, grated
  • 2 cups (226 g) mozzarella cheese, shredded, divided
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 3 cups rotisserie chicken, shredded, diced
  • 2 teaspoons fresh parsley, finely chopped for garnish
  • salt, to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Boil pasta in salted water according to package directions.
  3. Reserve 1 cup of pasta water and drain the rest.
  4. Set the noodles and reserved pasta water aside.
  5. In a large oven-safe skillet over medium heat, melt the butter.
  6. Add the minced garlic and cook for 30 seconds.
  7. Add the all-purpose flour to the skillet and whisk it together with the butter, cooking for 1 more minute.
  8. Slowly drizzle in the milk and heavy cream, whisking constantly until the mixture thickens enough to coat the back of a spoon.
  9. Add the parmesan cheese, ½ cup of shredded mozzarella cheese, onion powder, kosher salt, and black pepper.
  10. Continue to stir until the cheese is completely melted and the sauce is smooth.
  11. Add the rotisserie chicken and cooked pasta.
  12. Stir to combine everything evenly with the sauce.
  13. If your sauce is too thick, add some reserved pasta water, stirring to combine.
  14. Sprinkle the remaining shredded mozzarella cheese over the top of the dish.
  15. Bake, uncovered, for approximately 20 minutes or until cooked through and lightly browned.
  16. Garnish with finely chopped fresh parsley and serve.

Chicken Alfredo Bake

Enjoy the creamy goodness of Chicken Alfredo Bake—a comforting dish featuring tender chicken, pasta, and creamy Alfredo sauce, baked to perfection for a satisfying meal.

Ingredients:

  • 1 lb penne pasta
  • 2 cups cooked chicken, shredded
  • 2 cups Alfredo sauce (homemade or store-bought)
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 cup broccoli florets, steamed
  • 1/2 cup milk
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional for topping)

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Cook penne pasta according to package instructions until al dente, drain and set aside.
  3. In a large mixing bowl, combine Alfredo sauce, mozzarella cheese, milk, and minced garlic. Season with salt and pepper to taste.

Ingredients
7 large potatoes, peeled and cubed
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup sour cream
1/4 cup butter
2 tablespoons chopped green onions
2 teaspoons salt
1/4 teaspoon black pepper
1 cup shredded Cheddar cheese

Directions
Preheat oven to 400 degrees F (200 degrees C). Grease a 2 quart casserole dish.
Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes.
Drain and mash.
In a large bowl combine mashed potatoes, spinach, sour cream, butter, green onions, salt and pepper. Spoon into prepared dish.
Bake for 15 minutes. Top with cheese and bake 5 minutes longer.
