Christmas Fruit Cake

  • ¾ Cup butter room temperature
  • 1 Cup brown sugar
  • 2½Cups mixed dried fruits
  • 1 Cup glace cherries roughly chopped
  • 1 Cup dried canberries
  • Zest of 1 orange
  • Zest of 1 lemon
  • ½ Cup orange juice
  • 3 large eggs lightly whisked
  • 1½Cup all-purpose/ plain flour
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • 1 tsp allspice
  • ½ tsp salt
  • ¼ tsp nutmeg
  1. In a large saucepan mix together butter, sugar, mixed dried fruits, cranberries, glace cherries, orange and lemon zest, orange juice.
  2. Let the mixture simmer for 10min on medium heat stirring occasionally.
  3. Remove the pan from the heat and let it cool for 30min.
  4. After 30min stir in eggs to the fruit mixture.
  5. Sift flour, baking powder, salt and spices and add to the fruit mixture mix properly.
  6. Spoon the mixture into the baking tray .If you are not using a non stick pan line the tray with parchment paper.
  7. Preheat oven to 150°C and bake the cake for 45min,after 45 lower the temperature to 140°C and continue baking for 2 more hours.
  8. When the cake is done remove it from oven and poke some holes using a skewer.
  9. Prepare syrup by mixing ½ Cup water,2 tsp maple syrup,½ cup brown sugar and bring to boil.
  10. Pour the syrup over the cake, let it cool completely.
  11. Remove from baking tray you can serve or keep for some days.

Christmas and Valentine’s Day Dessert

  • 1 pkt Jelly, any flavor but a red one will be the one!
  • 1 cup sliced fresh fruit (raspberries, strawberries etc)
  • 1 cup whipped topping (or fresh whipped cream)
  1. Make up jelly according to package directions.
  2. Chill until slightly thickened.
  3. Set aside 1/3 cup.
  4. Add fruit to remaining jelly; spoon into 4 to 5 glasses.
  5. Chill glasses at an angle (see picture) until jelly is set.
  6. Meanwhile, fold whipped topping into the reserved (1/3 cup) jelly.
  7. Spoon topping mixture into glasses of set jello.
  8. Chill.
  9. Garnish and serve!

Christmas Punch (Alcoholic or Not)

INGREDIENTS
1 orange sliced
1 cup cranberries
1/2 cup pomegranate seeds
2 cup cranberry juice
2 cups orange juice
1 cup pomegranate juice
2 cups Sierra Mist or Sprite
1 cup white rum optional
Rosemary for garnish
Ice

INSTRUCTIONS
Combine all ingredients in a large pitcher or punch bowl over ice.
If using a really large punch bowl, you can double the recipe.

NOTES
This punch can be made ahead of time, but don’t add the ice or soda until just before serving so as not to dilute or lose its fizz.
You can sub the lemon-lime soda for ginger ale.
You can add lemon and limes slices as well.
Keep alcohol on the side for guests to add their own and keep the punch itself kid-friendly.
I like white rum, spiced rum, whiskey, and vodka with this recipe.

Vrugte + Vloeistof + Bruismeel = Vrugtekoek
KLAM, MAKLIK EN LEKKER! Die Maklikste en heerlikste vrugtekoek.
Wie se jy moet wag tot krismis om dit te mag eet! !! !!
Eet dit nou saam met tee, koffie of n lekker glas wyn.

Bestandele:
1kg vrugtemengsel + 1 boksie cherries(ek koop Food Lovers se emmertjie vrugtemengsel)
575 ml rooibostee + 125ml brandewyn opsioneel(vloeistof moet 700ml wees)
2 koppies bruismeel

NOU:
Laat die vrugte oornag week in die vloeistof.
Voeg die meel en n knippie sout by die vrugte.
Roer alles goed deur.
Voer jou koekpannetjie met bakpapier en spuit met Spray en Cook.
Gooi die mengsel in jou pannetjie.
Bak op 140 C. Vir 2 uur. Toets of dit deurgaar is. Anders los dit nog bietjie in jou oond.
As die koek te danker raak sit n stukkie tinfoil op.
As dit gaar is haal die koek uit jou pannetjie en sprinkel met brandewyn.
Maak toe met tinfoil en sprinkel gereeld met brandewyn.
So so lekker en Maklik!
Vir ekstra geur: sny groenvye by jou vrugtemengsel.
Sit gekapte neute of gesnyde dadels by.
Geur met speserye soos kaneel, gemmer en neutmuskaat.
In plaas van tee kan jy sjokolademelkies, koffie of vrugtesap gebruik.
Jy kyk nooit weer terug nie. Dis die een!
