Cornish Split

  • 330 g Bread flour
  • 300 ml milk
  • 1/2 tsp salt
  • 4 tsp instant yeast
  • 1 tbsp sugar
  • 2 tbsp butter
  1. Add dry ingredients to stand mixer
  2. Add butter to milk and microwave for 30 seconds
  3. Using the hook and with mixer running slowly add milk
  4. Knead on medium low until you get a soft tacky dough
  5. Move the dough to a large greased bowl and cover
  6. Rise for 1 hour or until it doubles
  7. Dump onto a floured board and divide into 8 equal pieces.
  8. Ball each piece and place on parchment covered baking sheet
  9. Preheat oven to 190c/375f
  10. Let buns rise for 15 minutes
  11. Bake for 15-20 minutes until golden.
  12. Cool on a rack
  13. Split the buns and add jam and clotted cream
  14. Dust tops with powdered sugar

Notes:

Strawberry jam is traditional but I prefer raspberry.
Whipped cream can be used instead of clotted cream.
Spilt the bun at an angle and not quite all the way through.
