Parmesan Crusted Chicken

Ingredients:

  • 4 chicken breasts, pounded thin
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Panko breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons butter

Directions:

  1. Season the chicken breasts with salt and pepper.
  2. Place flour, beaten eggs, and a mixture of Panko breadcrumbs, grated Parmesan, garlic powder, and Italian seasoning in three separate shallow dishes.
  3. Dredge each chicken breast in flour, dip in beaten eggs, and then coat in the breadcrumb mixture.
  4. Heat olive oil and butter in a large skillet over medium heat.
  5. Cook the chicken breasts until golden brown and crispy, about 4-5 minutes per side, or until the internal temperature reaches 165°F (74°C).
