Vanilla Magic Custard Cake

Description

Vanilla Magic Custard Cake is melt-in-your-mouth soft and creamy. You have to try this delicious, triple layered cake. A custard-like vanilla filling separates a light, fluffy layer on top and a dense cake layer on the bottom, to create the ultimate vanilla cake recipe!

Ingredients

  • 1/2 cup unsalted butter-melted and slightly cooled
  • 2 cups milk-lukewarm
  • 1 and 1/4 cups (150 g) powdered sugar
  • 4 eggs-separated
  • 1 Tablespoon water
  • 1 cup (115g) flour
  • 2 teaspoon vanilla extract
  • powdered sugar for dusting

Instructions

  1. Preheat the oven to 325°F
  2. Lightly grease 8×8 inch baking dish, set aside
  3. Whip the egg whites until stiff peaks form, set aside.
  4. Beat the egg yolks and powdered sugar until pale yellow.
  5. Mix in melted butter and the tablespoon of water (for about 2 minutes) until evenly combined.
  6. Mix in the flour until evenly incorporated.
  7. Slowly beat in the milk and vanilla extract until well combined.
  8. Fold in the egg whites (1/3 at a time, then repeat until all of the egg whites are folded in).
  9. Pour the batter into the pan and bake for 40-60 minutes (until the cake is barely jiggly in the center).
    Baking time might vary depending on your oven or pan you use, but start checking after 40 minutes.
    If the top browns too quick before the minimum of 40 minutes, you can cover the cake with aluminum foil.
  10. Cool the cake completely before dusting with powdered sugar.
    Even cooled, it will be slightly jiggly because it has custard layer in the center.

KOEK
125 g botter
375 ml (1 V2 k) suiker
4 ekstragroot eiers
500 ml (2 k) koekmeel
20 ml ( 4 t) bakpoeier
1 ml (V4 t) sout
250 ml (1 k) melk
VLAMENGSEL
130 g botter
250 ml (1 k) versiersuiker
500 ml (2 k) melk
100 ml vlapoeier
5 ml (1 t) vanieljegeursel
Voorverhit die oond tot 180 °C en smeer ‘n 23 cm koekpan

KOEK
Verroom die botter en suiker tot lig en romerig Klits die eiers een vir een by en klits goed na elke byvoeging.
Sif die droe bestanddele saam.
Verhit die melk en botter en vou om die beurt met die droe bestanddele by die eiermengsel in.
Skep die beslag in die pan en bak sowat 30-40 minute of tot ‘n toetspen skoon uit die middel van die koek kom Laat effens in die pan afkoel en keer dan op ‘n draadrakkie uit. Sny die koek in twee lae.
VLAMENGSEL
Verroom die better en versiersuiker baie goed.
Meng 50 ml van die melk met die vlapoeier en geursel, en verhit die res.
Giet die vlapasta by en roer tot die mengsel kook en verdik. Laat afkoel en klits dan by die versiersuikermengsel in deel in twee.
Smeer een koeklaag met ‘n laag via en plaas die ander laag bo-op.
Skep hopies via bo-op.

Koek:
lk Melk
1/2k Botter
lk Strooisuiker
2k Meelblom
4tl Bakpoeier
2ml Sout
3 Eiers

Vulsel:
9tl Vlapoeier (45ml)
2k Melk
1/2k Botter
lk Suiker
ltl Vanilla
Voorverhit oond tot 190 C.
Smeer 2 koekpanne.

Koek:
Verhit melk en batter tot kookpunt en verwyder van hitte.
Klop eiers en suiker tot lig en romerig .
Sif meel, bakpoeier en sout en roer by eiermengsel.
Voeg warm melkmengsel by en meng.
Verdeel beslag tussen die 2 panne.
Smeer gelyk en bak 20min.
Keer uit en laat heeltemal koud word.

Vulsel:
Roer vlapoeier geleidelik by melk tot alles opgelos is.
Verhit tot kookpunt en kook vir 1 min.
Verwyder van hitte laat heeltemal koud word.
Klop botter tot lig en donsig, voeg suiker by en verroom.
Roer vlamengsel by en geur met vanilla.
Halveer die koeklae met ‘n garedraad.
Smeer van die vulsel oor elke laag en plaas opmekaar.
Sprinkel van die koekkrummels bo-oor.
