Fluffy Yogurt Cake

Ingredients:

  • 300 g of Greek yogurt (plain is also fine)
  • 4 egg yolks
  • 4 egg whites
  • 3 tablespoons of cornstarch
  • 6 tablespoons of maltitol or erythritol (or sugar)
  • 1 packet of vanilla sugar (optional)
  • 1 teaspoon of baking powder
  • A pinch of salt
  • Enough powdered sugar for dusting

Method:

  1. Prep:
    1. Preheat your oven to 180°C (356°F).
    2. Grease a cake pan and set aside.
  2. Mix Yogurt and Yolks:
    1. In a large bowl, combine 300 g of Greek yogurt with 4 egg yolks, mixing until smooth.
  3. Dry Ingredients:
    1. Add 3 tablespoons of cornstarch, 6 tablespoons of maltitol, erythritol, or sugar, and 1 packet of vanilla sugar (if using) to the yogurt mixture.
    2. Stir in 1 teaspoon of baking powder and a pinch of salt.
  4. Whip Egg Whites:
    1. In a separate bowl, beat the 4 egg whites until stiff peaks form.
  5. Fold:
    1. Gently fold the egg whites into the yogurt mixture, taking care not to deflate the mixture.
  6. Bake:
    1. Pour the batter into the prepared cake pan.
    2. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Fluffy Condensed Milk Bread

Ingredients:

  • 240 ml (1 cup) warm milk
  • 75 g (¼ cup) condensed milk
  • 1 egg
  • 30 g (2 tbsp) sugar
  • 7 g (2 ¼ tsp) dry yeast
  • 520 g (4 ¼ cup) flour
  • 1 tsp salt
  • 50 g (¼ cup) butter, softened
  • 45 g (3 tbsp) butter
  • 45 g (3 tbsp) condensed milk

Method:

  1. Whisk warm milk with sugar and condensed milk.
  2. Add the dry yeast and an egg, whisk again.
  3. Combine liquids with dry ingredients – flour and salt.
  4. Work the dough with the dough hooks until it comes together.
  5. Add butter and knead for 10 minutes.
  6. Set the dough aside for 1 hour.
  7. Cut ⅔ of the dough and roll it out into a 25×40 cm rectangle.
  8. Roll the dough into a log and cut this log into pieces.
  9. Place pieces of dough into a prepared baking pan and set aside.
  10. To make smaller buns repeat the same process with leftover ⅓ of dough.
  11. Set the buns aside for 1 hour. Brush the top of each bun with egg wash before baking.
  12. Bake at 180C/350F for 25-30 minutes. For smaller buns, 20 minutes will be enough.
  13. Whisk equal parts of butter and condensed milk.
  14. Brush buns with this mixture while they are still warm.
  15. Remove from the baking molds when they are fully cooled down.
