1 C. Couscous
1 1/2 c. low-sodium chicken broth
2 tbsp. extra-virgin olive oil
Juice of 1/2 a lemon
2 tbsp. freshly chopped parsley
Kosher salt

Pinch red pepper flakes
DIRECTIONS
Rinse couscous under cold water until water runs clear.
In a medium saucepan over medium heat, bring broth to a boil. Add couscous, then cover
with a lid and remove from heat. Let sit 10 minutes, then fluff with a fork.
Add oil, lemon juice, and parsley. Season with salt, pepper, and a pinch of red pepper flakes.
