Kentucky Butter Cake Cookies

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Glaze:

  • 1/4 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper and set aside.
  3. In a large mixing bowl, cream together softened unsalted butter and granulated sugar until light and fluffy.
  4. Beat in egg and vanilla extract until well combined.
  5. In a separate bowl, whisk together all-purpose flour, baking powder, and salt.
  6. Gradually add the dry flour mixture to the butter mixture, mixing until a soft dough forms.
  7. Using a cookie scoop or spoon, drop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. While the cookies are baking, prepare the glaze.
  10. In a small saucepan, combine unsalted butter, granulated sugar, water, and vanilla extract.
  11. Cook over medium heat, stirring constantly, until the sugar is dissolved and the mixture is smooth.
  12. Remove the cookies from the oven and immediately brush the warm glaze over the tops of the cookies.
  13. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  14. Once cooled, serve the Kentucky Butter Cake Cookies and enjoy every buttery bite!

Kentucky Butter Cake

Ingredients:

  • 1 cup butter, softened
  • 2 cups of sugar
  • 4 large eggs, room temperature
  • 2 teaspoons of vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon of salt
  • 1 cup buttermilk

Butter Sauce:

  • 1 cup of sugar
  • 1/2 cup of butter cut into cubes
  • 1/4 cup of water
  • 1-1/2 tsp vanilla extract

Methods:

  1. In bowl, cream the butter & sugar until light & fluffy.
  2. Adding eggs, one at a time, beating well after every addition.
  3. Beating in vanilla.
  4. Blending flour, baking powder, baking soda also salt; add to cream mixture alternately with buttermilk, beating well after every addition.
  5. Pour into a greased and floured 10 inch pan. tube mould.
  6. Bake at 350° until a toothpick inserted in the center comes out clean, 55-70 minutes.
  7. Cool 10 minutes.
  8. Run a knife around the edges and the central tube of the mold.
  9. Invert cake onto rack over waxed paper.

Butter Sauce:

  1. For the sauce, combine the sugar, butter and water in a small saucepan.
  2. Cook over medium heat until butter is melted and sugar is dissolved.
  3. Remove from fire; incorporate the extracts.
  4. Poke holes in top of hot cake; pour 1/4 cup sauce over cake.
  5. Let stand until sauce is absorbed.
