Pampoen Muffins met Kaneelsuiker

Lewer 10-12 muffins. (Afhangend van die grootte wat jy wil hê.)

Bestanddele

  • 1 ½ koppie koekmeel
  • ½ teelepel bakpoeier
  • 1 koppie (ongeveer 250g) boerpampoen, gekook en fyngedruk.
  • ½ koppie olie
  • 2 groot eiers
  • 1 ¼ koppie suiker
  • ½ teelepel kaneel
  • ¼ teelepel gemmer
  • ⅛ teelepel fyn naeltjies
  • ⅛ teelepel neutmuskaat
  • ½ teelepel sout
  • ½ teelepel koeksoda
  • Kaneelsuiker: 1 eetlepel suiker en 1 teelepel kaneel (Pas aan na smaak)

Metode:

  1. Kook die pampoen tot sag en druk dit fyn met ‘n aartappeldrukker of vurk.
  2. Laat eenkant om af te koel.
  3. Voorverhit die oond tot 180˚C.
  4. Spuit ‘n standaard muffin pannetjie met ‘n kleefwerende middel of voer elke holtetjie uit met ‘n papier muffinhouertjie.
  5. Sif die meel en bakpoeier saam in ‘n medium mengbak en hou dit eenkant.
  6. Meng die pampoen, eiers, olie, suiker, kaneel, gemmer, naeltjies, neutmuskaat, sout en koeksoda saam in ‘n groot mengbak.
  7. Gooi die meel by die mengsel en meng dit saam met ‘n draadklitser. Moenie dit oormeng nie.
  8. Verdeel die mengsel eweredig tussen elke holtetjie in die pan. Maak so 11 holtetjies te verdeel.
  9. Strooi die kaneelsuiker oor die mengsel.
  10. Druk die muffins in die oond vir 20-25 minute of tot ‘n toetspen skoon uitkom wanneer dit daarin gedruk word.
  11. Los die muffins vir nog 5 minute in die pannetjie om af te koel voordat jy hulle op ‘n afkoelrakkie uitkeer.
  12. Stoor in ‘n lugdigte houer en geniet!

150g Biltong, finely chopped
3 tbsp Butter, melted
2 cups Cake flour…
2 tsp Baking powder
2 tbsp Sugar
2 Eggs
1 cup Milk
1 cup Cheddar cheese, grated
3 tbsp Marmite
Handful of chopped fresh chives

Instructions

  1. Heat your oven to 190° and butter up your muffin tins.
  2. Mix the melted butter and chives together and set aside to cool slightly.
  3. In a bowl, add the flour, baking powder, sugar and salt and mix with a spoon.
  4. In a separate large bowl add the eggs, milk and marmite and give a light whisking, then add the butter and chive mixture, the grated cheese and chopped biltong pieces. Give it a good mix to combine.
  5. Add the flour mixture to the egg mixture and stir with a spoon in a folding motion until combined.
  6. Fill the muffin tins to 2/3 full and bake until golden brown (about 20 minutes).
  7. Remove them from the tins and allow to cool on a wire rack.
