]]>German Mushroom Soup
A rich and creamy soup packed with earthy mushrooms, perfect for cold weather.
Ingredients:
1 lb (450 g) mushrooms, sliced
1 small onion, finely chopped
3 cups (720 ml) vegetable broth
1 cup (240 ml) heavy cream
2 tbsp butter
2 tbsp flour
1/2 tsp nutmeg
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Melt butter in a pot and sauté onions until soft.
Add mushrooms and cook until they release their juices.
Stir in flour and cook for 1 minute.
Pour in vegetable broth, stirring constantly, and bring to a boil.
Reduce heat, add heavy cream and nutmeg, and let simmer.
Season with salt and pepper, garnish with parsley, and serve.
