Pannekoek

  • 3 x 250 ml koekmeel
  • 3 groot eiers
  • 175 ml koppie olie
  • 25 ml asyn
  • 3 ml sout
  • 15 ml bakpoeier
  • 4 x 250 ml water

Metode

  1. Klits eiers en water baie goed.
  2. Gooi kookolie, asyn en sout by en klits weer goed.
  3. Gooi meel by en klits.
  4. Gooi bakpoeier laaste by en klits vir 1 min.
  5. Hoe langer die mengsel staan voor gebruik hoe beter.
  6. Die mengsel kan in die yskas gebêre word vir 1 week.
  7. Lewer omtrent 15 middelslag pannekoeke.
  8. Ek verdubbel gewoonlik die resep.

  6. The mixture can be stored in the fridge for 1 week.
  7. Makes about 15 medium pancakes.
  8. I usually double the recipe.

Strawberry Banana Pancake Skewers

Fruity Pancake Skewers: A Sweet Breakfast Delight

Ingredients:

For the pancake batter:

  • Your favorite pancake mix (follow the mix instructions for the amount needed for one batch)
  • Egg (according to pancake mix instructions)
  • Milk (according to pancake mix instructions)
  • Butter (melted, according to pancake mix instructions)

For the skewers:

  • Strawberries (halved)
  • Bananas (sliced)
  • Powdered sugar (for garnish)
  • Maple syrup (for serving)

Directions:

  1. Prepare the Pancake Batter:
    1. In a large mixing bowl, combine the pancake mix, egg, milk, and melted butter as per the instructions on the pancake mix package.
    2. Gently whisk just enough to moisten the flour, being careful not to overmix.
    3. Transfer the batter into a squeeze bottle.
  2. Cook the Pancakes:
    1. Heat a non-stick pan over medium heat.
    2. Squeeze a quarter-sized amount of batter onto the pan for each mini pancake.
    3. Cook until bubbles form on the surface and the bottom has browned, then flip and cook the other side.
    4. Remove and set aside.
  3. Assemble the Skewers:
    1. Start with a mini pancake, add a slice of banana, and then a half strawberry.
    2. Repeat the sequence twice, finishing with a mini pancake on top. Insert a skewer down the center to hold everything together.
  4. Garnish and Serve:
    1. Dust with powdered sugar and serve with maple syrup for dipping or drizzling.

Basic Pancake Ingredients:
310 ml cake flour
3 ml baking powder
2 ml salt
60 ml sugar
2 eggs
300 ml milk
Cooking Oil
Cinnamon Sugar

Method:
Sift the flour, baking powder and salt, add the sugar.
Add the milk while stirring
Mix in the eggs.
Mix everything very well and make sure there is no lumps.
Let the mixture rest for 30min.

Milktart Filling Ingredients:
1 tin condensed milk
3 cups milk
¼ cup maize meal
2 eggs
Pinch of salt
1 teaspoon vanilla essence
30 ml butter
Cinnamon Sugar

Method:
Bake the pancakes – do not roll them yet.
Mix 2 cups of the milk + the condensed milk in a pot on the stove (low heat)
Mix the rest of the milk with the maize meal and add it to the mixture in the pot.
When the mixture starts to thicken, add your eggs.
Keep on stirring.
Add the salt, vanilla & butter.
Mix very well and let it rest and thicken even more.
Take a spoon and add ± 3 – 4 spoonfulls of melktertmixture to each pancake, then roll it up.
Sprinkle with Cinnamon Sugar

INGREDIENTS
1 batch traditional pancakes

FILLING
1 can caramel
250ml cream
125 ml plain full-cream yoghurt
1 bar Peppermint Crisp chocolate, grated

ASSEMBLY
extra whipped cream (optional)
1 bar Peppermint Crisp chocolate, roughly chopped a few fresh mint sprigs

METHOD
30 min
1. Make sure the pancakes have cooled completely – you can make them a day or two in advance.
2. Filling Using an electric beater, beat the canned caramel until smooth.
Whip the cream into stiff peaks and lightly fold in the caramel, yoghurt and grated chocolate.
3. Assembly Put a pancake on a plate and spread a little filling over.
Lay another pancake on top, spread filling over and keep going until you’ve used all the pancakes and filling, ending with filling on top.
4. Spoon the whipped cream over (if using).
Sprinkle the chocolate on top and garnish with mint.
Slice carefully and serve.
