Tropical Pineapple Paradise Cake

Ingredients:

  • 3 cups all-purpose flour
  • 3 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 1 cup sour cream
  • 2/3 cup crushed pineapple, drained
  • 1/3 cup pineapple juice
  • 5 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour three 8-inch round cake pans.
  3. In a large mixing bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in vanilla extract.
  6. In a separate bowl, sift together flour, baking powder, baking soda, and salt.
  7. Gradually add the dry ingredients to the creamed mixture, alternating with sour cream and pineapple juice.
  8. Fold in crushed pineapple until evenly distributed.
  9. Divide the batter evenly between the prepared cake pans.
  10. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  11. Remove cakes from the oven and let them cool in the pans for 10 minutes before transferring to wire racks to cool completely.
