Lemon Pepper Chicken Meatballs

Ingredients:

  • 1/2 medium or 1 small yellow onion
  • 4 cloves garlic, divided
  • 1/2 medium bunch fresh parsley
  • 1/2 cup unseasoned fine dried or panko breadcrumbs
  • 1 cup whole or 2% milk, divided
  • 1 large egg
  • 1/2 teaspoon kosher salt, plus more as needed
  • 1 tablespoon plus 1 teaspoon lemon pepper seasoning with salt, divided
  • 1 1/2 pounds ground chicken
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/4 cups low-sodium chicken broth
  • Cooked egg noodles, mashed potatoes, steamed rice, or crusty bread, for serving (optional)

Directions:

  1. Preheat the oven to 425°F.
  2. Line a baking sheet with parchment or a silicone baking mat.
  3. Grate the onion directly into a large bowl.
  4. Finely grate 2 garlic cloves into the bowl.
  5. Finely chop the parsley, reserving 1 tablespoon for garnish, and add the rest to the bowl.
  6. Add breadcrumbs, 1/4 cup milk, the egg, 1 tablespoon lemon pepper seasoning, and salt to the bowl.
  7. Stir until the breadcrumbs are moistened.
  8. Add the ground chicken and mix until combined.
  9. Form the mixture into 2-tablespoon-sized meatballs and place on the baking sheet.
  10. Bake until internal temperature reaches 165°F, about 12-15 minutes.
  11. For the sauce, melt butter in a skillet over medium heat.
  12. Add remaining garlic and flour, stirring for 1 minute.
  13. Add remaining milk, lemon pepper seasoning, and chicken broth.
  14. Simmer until thickened, 3-5 minutes.
  15. Add meatballs to the sauce, coat evenly, and bake for another 10 minutes, or broil for 2-3 minutes for browning.
  16. Garnish with reserved parsley.
  17. Serve with your choice of side.

Knoffel & Peper Sous

  • 3 Koppies melk
  • 1 koppie room
  • 2 Eetlepels crushed knoffel
  • 2 eetlepels gemaalde swartpeper
  • 1 eetlepel gemaalde witpeper
  • 1 teelepel six gun grill spice
  • Sout na smaak
  • 2 Eetlepels mazina
  1. Kook melk, knoffel en droe bestandele saam tot als lekker smaak.
  2. Gooi dan die room by en laat diit lekker mature
  3. Tip: net voor opskep gooi so 1 eet lepel parmesan kaas poeier by.

Translation

Garlic & Pepper Sauce

  • 3 cups of milk
  • 1 cup of cream
  • 2 tablespoons of crushed garlic
  • 2 tablespoons of ground black pepper
  • 1 tablespoon of ground white pepper
  • 1 teaspoon grill spice
  • Salt to taste
  • 2 tablespoon mazina (corn flour)
  1. Cook milk, garlic and dry ingredients together to all delicious taste.
  2. Then add the cream and let it mature nicely
  3. Tip: just before serving add about 1 tablespoon of parmesan cheese powder.

Vars Lekker Pepper Steak Pie

Bestanddele:

  • 2 uie (opgekap)
  • 1 green pepper (opgekap)
  • 1 pakkie sampioene (opgekap)
  • 500g Maalvleis
  • 500g goulash
  • 2 aartappels in klein blokkies gesny
  • Gemaalde swartpeper na smaak
  • Sout na smaak
  • 2 pakkies Royco swartpeper sous
  • 1 eetl woschestersous
  • 2 pakkies gevriesde puff pastry (400g)

Metode:

  1. Braai uie, greenpepper en vleis saam in bietjie olie.
  2. Gooi Worcester sous en peper by.
  3. Dan as dit bruin gebraai is gooi sampioene en aartappels by.
  4. Gooi water by en kook vleis tot sag.
  5. Sodra vleis sag is maak pakkies aan soos aangedui op pakkie en gooi in en kook op lae hitte vir 5 min.
  6. Hou dop sodat dit nie aanbrand nie.
  7. Smeer diep bak botter of spray en cook.
  8. Druk eerste pak pastry onder bak bodem en kante vas.
  9. Gooi vleis in bedek weer met pastry bo op omthou om gaatjie in middel te steek ander kook hy oor.
  10. Smeer met eier en bak tot goud bruin op 180 grade.
  11. Bedien saam groen slaai.

INGREDIENTS
1 kg of beef fillet, cut into steaks
2 tbsp unsalted butter
2 tbsp olive oil
salt & pepper, to taste

METHOD
Sprinkle steaks with salt and pepper on both sides.
Rub seasoning into meat with your fingers.
Melt butter and olive oil in a large pan over medium heat
Add fillets and cook 5 minutes on each side.
In the same pan, add 250 ml fresh cream along with 50 ml Amarula.
Add 1 teaspoon flour to thicken the sauce.
Whisk until there’s no flour lumps.
Now add a generous amount of pepper.
Adjust seasoning and serve the sauce with beef fillet steak and mashed potatoes as a side.
